This post may seem a bit ‘unnecessary’ but I feel that the awesome sweet potato deserves a post all of its own. Isn’t it usually the case that the best stuff is bad for us? Well not in this case, yes you can safely ditch the boring old, starchy white potato in place the better-for-you, deliciously delectable SWEET potato. Just like the ‘boring old white potato’ there are so many ways you can cook this knobbly orange beauty.

Instructions
To bake: simply scrub and bake in a preheated oven at around 180oC for about 45 minutes, depending on the size of your potato
To roast: peel and chop to about 2 inch cubes, cover in oil or ghee and roast at about 180oC for about 40 minutes
For honey roasted: simply add a drizzle of honey
Wedges: chop scrubbed but unpeeled potatoes into wedges, cover in oil or ghee and cook at about 190oc for about 30-40 minutes
Chips: as above but cut into chip shapes
Skinny fries: either use a mandolin or slice and then chop the potato into very thin strips. These can either be fried in some coconut oil or baked in the oven at about 200oC for 25-30 minutes
Mash: peel and chop the potatoes into small cubes, steam and then mash adding some butter and almond milk to reach your desired consistency
