If you’ve over-indulged over the festive period (or even if you haven’t), this is a great, but simple dish for replenishing some nutrients back into your system and giving you that healthy inner peace again! By way of compassion for all of us who are kick starting some nice clean eating habits, there will be no sweet stuff posted over the coming weeks (for anyone who isn’t feeling the need to be so strict there’s plenty on here for you to choose from!).

Ingredients
- Splash of oil (coconut rapeseed, sunflower)
- 1 Onion finely chopped
- 2 carrots finely chopped
- 2 celery sticks finely chopped
- 1 garlic clove crushed
- 1 x 400g tin chopped tomatoes
- 1 tbsp tomato puree
- 1 ltr broth or stock
- 2 x 400g tins mixed beans drained and rinsed
- half a savoy cabbage finely chopped

Instructions
- Gently fry the onion for a minute or 2 in the oil, then add the carrot and celery, followed by the garlic and soften for about 4-5 minutes, covered.
- Add the tomatoes, tomato purée, stock and beans and bring to the boil.
- Reduce the heat, cover and simmer for another 25 minutes.
- Stir in the cabbage and continue to simmer for another 10 minutes or until the cabbage is cooked to your taste.
