Zest and juice
Instructions
Heat the oil and gently cook the onion for a few minutes.
Add the carrot, celery and garlic and cook for 5 minutes or so until softened.
Add the turkey meat and brown.
Add in the courgette for a few minutes, then the stock and lentils or beans.
Bring to the boil and simmer until the lentils and meat are cooked.
Finally add in the cabbage, parsley and lemon zest and juice and warm through before dishing up.
