Just like chicken, turkey is a wonderful high protein, low fat meat and great for adding into a healthy diet. This dish is a lovely, easy spring time nutrient booster. I’ve just dished mine up during a kids play dates and it was empty dishes all around!

Ingredients
- 1 Tbsp Ghee or oil
- 1 Onion Chopped
- 1-2 carrots Scrubbed and chopped
- 1 Stick Celery Chopped
- 1-2 Cloves garlic Crushed or chopped
- 500 G Turkey Breast or thigh, chopped or on the bone
- 1 courgette Chopped
- 1 Ltr stock or water
- 1 Cup Lentils or beans of any kind
- 1/2 Cabbage Any variety, chopped
- 2 Tbsp fresh parsley Chopped
- 1 lemon Zest and juice

Instructions
- Heat the oil and gently cook the onion for a few minutes.
- Add the carrot, celery and garlic and cook for 5 minutes or so until softened.
- Add the turkey meat and brown.
- Add in the courgette for a few minutes, then the stock and lentils or beans.
- Bring to the boil and simmer until the lentils and meat are cooked.
- Finally add in the cabbage, parsley and lemon zest and juice and warm through before dishing up.
