These are quick, easy, tasty and healthy. What more could you ask for?? I dished mine up with some simple red cabbage coleslaw and some parsnip chips but they would pretty much go with anything. Make up an extra batch and keep some in the fridge for a super quick, super healthy snack.

- 300 g skinless boneless turkey breast
- 1 egg
- 1 tsp dried thyme
- pinch of dried tarragon
- handful of fresh flat leaf parsley, finely chopped
- handful of fresh chives finely chopped
- grated zest of 1 lemon
- 100 g sweetcorn fresh or thawed frozen
- 1 tbsp gluten and wheat free flour

Instructions
- Preheat the grill to medium.
- Finely dice half the turkey breast and place it in a large mixing bowl.
- Put the rest of the turkey in a food processor and pulse to create a minced consistency (not a paste) and add it to the mixing bowl.
- Add the egg, thyme, tarragon parsley, chives, lemon zest, sweetcorn and flour and mix together thoroughly.
- Shape into four medium sized burgers (or more smaller ones).
- Place the burgers on a baking tray and cook under the grill for about 8 minutes on each side until golden brown.
