Turkey and Black Bean Chilli with Sweet Potato

Ingredients
2
sweet potatoes
peeled and cut into 3/4 in pieces
2
tbsp coconut oil or ghee
1
large onion
diced
2
cloves
garlic
minced

tsp
ground cumin
1/2
tsp
sweet paprika
1/2
tsp
mild chilli powder
500
g
minced turkey
1
tin chopped tomatoes
1
tin black beans
rinsed and drained
handful fresh coriander
chopped
2
spring onions
chopped
Jalapenos
Instructions
Preheat the oven to 190oC
Place the potatoes on a baking tray with the oil, sprinkle with a pinch of sea salt and bake for about 20-30 minutes, until soft
Meanwhile, gently cook the onion, garlic, cumin, paprika, chilli powder and a pinch of salt in the coconut oil or ghee
After about 8-10 minutes add the turkey and continue to cook gently until it is browned
Add the tomatoes plus about 1/2 cup of water, bring to the boil and simmer for about 20 minutes
Add the beans and sweet potatoes and simmer for another 15 minutes
Serve with the coriander, spring onions and Jalapenos on top
