I wanted to get this one in early as a decent breakfast really is key to a healthy lifestyle and unfortunately so many of us are getting it wrong. If you eat packaged cereal – even the ‘healthy’ kind the likelihood is you are starting your day with a bowl of sugar that is going to lead you on a sugar rollercoaster and a mid-morning energy crash.
This recipe is one of my weekly staples and another from the amazing Amelia Freer. I at least double up this recipe and store it in a jar – it literally takes minutes to make and as I don’t eat it everyday this amount lasts a good few weeks.

- 2 tbsp chia seeds
- 2 tbsp hemp seeds
- 2 handfuls mixed chopped nuts
- 1 tbsp sunflower seeds
- 1 tbsp pumpkin seeds
- 1 tsp ground cinnamon
- 1 tsp vanilla extract I use vanilla powder
- 1 tbsp coconut crystals I used unsweetened desiccated coconut

- Simply mix all the ingredients together and serve with a handful of fresh fruit (preferably berries) and either some coconut yoghurt or some coconut or almond milk.
Had this today, not going to lie Lee made it not me but it was really nice with blueberries and strawberries this morning!
