Instructions
Preheat the oven to 175oC.
Mix 1 egg with your grated sweet potato, cheese and herbs and press a little of the mixture into the heavily greased holes in a muffin tray.
Baked the potato mixture in the oven for around 10 minutes.
Crack an egg into each of the muffin holes on top of the sweet potato and return to the even.
Bake until the eggs are cooked to your liking (ap. 7 mins for soft, 10 for hard).
Scoop out with a spoon and enjoy or refrigerate for later.
