I’d forgotten how much we loved these until I made them again this weekend and they were snaffled up in record time. It would be unfair to keep this one to myself any longer!!

- 1-2 sweet potatoes Peeled and grated
- 13 eggs
- 20 G Pecorino cheese Grated
- 1-2 Tsp Herbs e.g basil, oregano, chives Fresh or dried

Instructions
- Preheat the oven to 175oC.
- Mix 1 egg with your grated sweet potato, cheese and herbs and press a little of the mixture into the heavily greased holes in a muffin tray.
- Baked the potato mixture in the oven for around 10 minutes.
- Crack an egg into each of the muffin holes on top of the sweet potato and return to the even.
- Bake until the eggs are cooked to your liking (ap. 7 mins for soft, 10 for hard).
- Scoop out with a spoon and enjoy or refrigerate for later.
