Amelia Freer is my current nutrition crush – she has such a straight-forward way of talking about food and health and such a simple style of cooking. She really makes you feel like healthy eating is so right and obvious and so down right easy. This is just one example of her super easy recipes. I made it for the kids a few weeks ago when we were heading out for a night out. My plan was to freeze the rest but we all ended up eating it for lunch the next day it was so delicious.

Ingredients
- 1 tbsp coconut oil
- 1 Onion chopped
- 2 c;loves garlic chopped
- 1 fresh chilli chopped
- 1 Handful cherry tomatoes
- 400-600 ml Passata
- 2 chicken breasts

Instructions
- Saute the onion, garlic and chilli in the oil
- Throw in the tomatoes, passata and chicken
- Simmer with a lid on for 20 mins or until the chicken is cooked through
