Ingredients
- 1 Onion chopped
- 2 tbsp ghee/coconut oil
- 1/2 tbsp turmeric
- 1/2 tbsp paprika
- 1 tsp red pepper flakes
- 1 tsp cumin
- 6 boned and skinned chicken thighs diced
- 1 cup pumpkin puree
- 2 courgettes sliced
- 2 cups button mushrooms sliced
- 1/4 cup water

Instructions
- Fry the onions and spices in a saucepan.
- Add the chicken and cook until browned.
- Add the purée and water, bring to the boil and simmer for about 15 minutes.
- Add the mushrooms and courgette and cook for a further 15 minutes or so until everything is cooked.
