I do like to follow recipes but I also like to wet my creative juices and cook meals that aren’t too prescriptive. This meal is so darn easy and you really can add a bit of whatever you fancy…

Ingredients
- 1 leg of lamb appropriate size for however many people you are feeding
- red wine
- stock or bone broth or water
- Onion peeled and quartered
- garlic unpeeled but slightly squashed
- rosemary
- bay leaves

Instructions
- Simply add the lamb plus whatever other ingredients you chose to a roasting tin
- Roast at approx. 150oC for approximately 4 hours (to keep the moisture in you can cover with foil and remove it for the last hour to brown off the meat)
- I served mine tonight with sweet potato mash, broccoli and some lovely roast carrots with sesame seeds
