Ingredients

fillets of white fish such as sea bass
Olive oil or oil of your choice
Juice from 1/2-1 lemon
1-2
tbsp
pesto
Handful cherry tomatoes
Instructions
Preheat the oven to 180oC
Tear off a large piece of tinfoil for each fish fillet – enough to wrap the fillet leaving a space above it.
Place the fillet onto the tinfoil along with a drizzle of oil and lemon juice, a dollop of pesto and a few cherry tomatoes.
Seal the tinfoil by scrunching the top but leaving a space between the fish and the top of the wrap.
Place the fillets on a tray and bake them for about 15-20 minutes.
