A long time ago I used to be addicted to cigarettes (ulgh, can you imagine it??) these days I think I could be addicted eggs. I could eat eggs with every meal – my chia seed omelette for breakfast, boiled eggs on salads for lunch, omelettes for dinner – but my all time favourite is an eggy brunch. As long as you have eggs and a pan you can add in whatever else takes your fancy.

Ingredients
- 1-2 eggs per person
- Almond milk optional
- mushrooms sliced and grill or fried
- organic bacon or turkey bacon grilled
- herbs or choice e.g. chives coriander
- tomatoes or sun dried tomatoes
- homemade baked beans see my recipe
- black pepper

Instructions
- Beat your eggs with a little almond milk if using
- Heat a frying pan and add a little oil or butter
- Add the eggs to the pan and stir every now and again until just undercooked
- Turn off the heat just before they look ready and allow the heat to finish them off
- Spoon onto a plate with whatever else you fancy
