  1. Preheat the oven to 180oC.
  2. Bake the swede for about 10-15 mins in some coconut oil.
  3. Add the sweet potato and pop back into the oven for another 15 minutes.
  4. Tuck the salmon fillets in between the vegetables and bake for a further 10-15 minutes.
  5. Mix the coconut cream with the mustard and add this, along with the spinach to the dish, sprinkle the cheese on top and bake for 5 minutes more.
