- 1/2 Swede chopped
- 1 sweet potato peeled and chopped
- 4 Salmon fillets
- 250 mls coconut cream
- 2 tbsp Dijon mustard
- 3 handfuls spinach
- 2 tbsp Pecorino grated

Instructions
- Preheat the oven to 180oC.
- Bake the swede for about 10-15 mins in some coconut oil.
- Add the sweet potato and pop back into the oven for another 15 minutes.
- Tuck the salmon fillets in between the vegetables and bake for a further 10-15 minutes.
- Mix the coconut cream with the mustard and add this, along with the spinach to the dish, sprinkle the cheese on top and bake for 5 minutes more.
