As somebody who used to love to bake ‘traditional’ sugar and flour cakes I am amazed that this works so well but it really does!! I have tried quite a few banana muffin recipes. Some are really long-winded and full of expensive ingredients. This one is not!! It’s a great one to whizz up and have ready for hungry kids.

Ingredients
- 5 eggs
- 2 bananas or 3 if small
- 1/4 cup coconut oil melted
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1 tsp vanilla
- milk if needed

Instructions
- Preheat oven to 190oC
- Whisk together all the ingredients (adding the milk only if necessary)
- Add blueberries if using
- Pour into greased muffin cases
- Bake for 13-18 minutes
