This tasty dessert comes with thanks from one of my Instagram followers. I tested it out recently when the in-laws were round for dinner and it went down a storm. I never get tired of surprising people with how tasty sugar-free can be 😉

Ingredients
- For the base:
- 1/2 cup cashews
- 1/4 cup almonds
- 1/2 cup desiccated coconut
- 2 tbsp flaxseeds
- 2 dates
- 1 tbsp water
- 1 tsp cinnamon
- For the topping:
- 1/2 cup cashews soaked
- 1/2 cup Coconut water
- 1/2 cup desiccated coconut
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- seeds from 1 vanilla bean
- Optional:
- sliced orange/peach/apple...

Instructions
- Blend the ingredients for the base and press into a lined bread tin.
- Freeze for an hour or two.
- Blend the ingredients for the topping, poor over the frozen base and return to the freezer for another couple of hours.
- Top with some sliced fruit of your choice.
