Ingredients

dates
pitted and soaked in warm water for 20 mins

warm water

coconut oil

tbsp vanilla extract

desiccated coconut

raw sunflower seeds

raw pumpkin seeds

raw hemp seeds
Instructions
Whizz the dates and soaking water in a blender to a smooth paste.
Poor the melted oil and vanilla into the blender and blend again.
Mix the oats, coconut, pumpkin and sunflower seeds in a bowl then divide the mixture in half.
Pulse half in the blender so you maintain some texture then mix again with the ‘whole’ mixture.
Add the previously blended ingredients and mix thoroughly so no dry ingredients remain.
Tip the mixture into a lined baking tray and press down.
Scatter hemp seeds over the top and press them in.
Refrigerate for 2 hours to set.
Remove from the fridge and cut into squares or rectangles and keep for up to a week in an airtight container in the fridge.
