Ingredients
- 300 g dates pitted and soaked in warm water for 20 mins
- 240 ml warm water
- 120 ml coconut oil melted
- 1 tbsp vanilla extract
- 500 g jumbo rolled oats
- 100 g desiccated coconut
- 100 g raw sunflower seeds
- 100 g raw pumpkin seeds
- 40 g raw hemp seeds

Instructions
- Whizz the dates and soaking water in a blender to a smooth paste.
- Poor the melted oil and vanilla into the blender and blend again.
- Mix the oats, coconut, pumpkin and sunflower seeds in a bowl then divide the mixture in half.
- Pulse half in the blender so you maintain some texture then mix again with the 'whole' mixture.
- Add the previously blended ingredients and mix thoroughly so no dry ingredients remain.
- Tip the mixture into a lined baking tray and press down.
- Scatter hemp seeds over the top and press them in.
- Refrigerate for 2 hours to set.
- Remove from the fridge and cut into squares or rectangles and keep for up to a week in an airtight container in the fridge.
