This time of year can be so full of rich and filling foods that sometimes it can all be a bit too much and I need something a bit more on the lighter side! I absolutely love this super quick, throw it all together chicken dish with it’s wonderfully light mixture of Mediterranean flavours.

Ingredients
- 1 Tbsp Goats butter
- 1 Tbsp rapeseed oil
- 3 chicken breasts Chopped
- 1/2 Onion Chopped
- 1-2 Cloves garlic Crushed
- 350 G mushrooms Halved
- 4-6 Handfuls fresh spinach
- 1/2 Jar Artichokes
- 5-6 Sun dried tomatoes Chopped
- 2 Tbsp Olives
- 1 Tbsp Fresh/dried oregano
- 1 Tbsp Fresh/dried parsley
- 1 Tbsp Fresh/dried basil
- 1 Tbsp balsamic vinegar

Instructions
- Heat the oil and butter in a large pan, add the chicken and cooked until thoroughly browned.
- Add in the onion and garlic and cook for a few minutes more.
- Add the mushrooms and continue to cook until the mushrooms are reasonably soft and the chicken is cooked through.
- Add the rest of the ingredients and cook for a final few minutes until the spinach is wilted and everything is warmed through.
