Ingredients

cashew nuts
(preferably activated)

tamari soy sauce

brown rice noodles

coconut oil

crushed or chopped

red chilli
deseeded and chopped

chicken breasts
cut into strips

large handfuls
tenderstem brocolli
cut on the cross

large carrot
cut into julienne strips

spring onions

Instructions
Blend the cashews and soy sauce until they form a paste (this can take a good 5 minutes or so).
Cook the rice noodles and then run under cold water.
Heat the coconut oil in a wok and fry the garlic and chilli for a few minutes before adding the chicken.
Once the chicken is browned add the brocccoli and carrot and continue until everything is cooked through (about 5-10 minutes).
Add the cooked noodles and cashew butter and top with the spring onions and another handful of cashews and serve straight away.
