Ingredients
- 100 g cashew nuts (preferably activated)
- 2 tsp tamari soy sauce
- 150 g brown rice noodles
- 1 tbsp coconut oil
- 2-3 c;loves garlic crushed or chopped
- 1 red chilli deseeded and chopped
- 2-3 chicken breasts cut into strips
- 3 large handfuls tenderstem brocolli cut on the cross
- 1 large carrot cut into julienne strips
- 3 spring onions chopped

Instructions
- Blend the cashews and soy sauce until they form a paste (this can take a good 5 minutes or so).
- Cook the rice noodles and then run under cold water.
- Heat the coconut oil in a wok and fry the garlic and chilli for a few minutes before adding the chicken.
- Once the chicken is browned add the brocccoli and carrot and continue until everything is cooked through (about 5-10 minutes).
- Add the cooked noodles and cashew butter and top with the spring onions and another handful of cashews and serve straight away.
