Ingredients
1
avocado
peeled and sliced or cubed
1/2
red onion
sliced
1
tin borlotti beans
drained and rinsed
a couple of handfuls of cherry tomatoes
halved or 3-4 large tomatoes, cubed or sliced
a small handful of sunflower seeds
juice of 1 lemon
Drizzle of olive oil
Instructions
Mix all of your ingredients together in a bowl or serving dish.
Drizzle over the olive oil and lemon juice and mix together.
