This easy bean salad is great as a super quick side dish or as a salad in it’s own right. Add some nice lean protein such as boiled eggs or grilled chicken for an all round healthy meal.

Ingredients
- 1 avocado peeled and sliced or cubed
- 1/2 red onion sliced
- 1 tin borlotti beans drained and rinsed
- a couple of handfuls of cherry tomatoes halved or 3-4 large tomatoes, cubed or sliced
- a small handful of sunflower seeds
- juice of 1 lemon
- Drizzle of olive oil

- Mix all of your ingredients together in a bowl or serving dish.
- Drizzle over the olive oil and lemon juice and mix together.
