Protein Flapjacks

Who doesn’t love a flapjack hey?  They’re like a right of childhood right?  This is another one of those ‘better than’ situations.  Shop bought flapjacks and traditional flapjack recipes are usually full of refined sugar – despite being marketed as a healthy snack.   Whilst these ones do contain honey, which will spike your blood sugar (albeit not as much as refined sugar), the added protein will help to minimise this effect and help to provide an all round more nutritious snack, making them a ‘better’ alternative.

Instructions
  1. Preheat the oven to 175oC and grease or line a roughly 20cm square cake tin.
  2. Melt the ghee (or butter) in a large pan and add the honey and warm through.
  3. Add the oats and other ingredients and mix until they are all well coated.
  4. Bake in the oven for about 15 minutes, or until the top is nice and golden.
  5. Cool for a few minutes, then cut the flapjacks whilst still in the tin and leave until completely cool before removing from the tin.
