You can’t beat a homemade curry and you can’t beat this super healthy alternative to curry’s favourite (but blood sugar spiking) friend, rice. It doesn’t need to go with curry either – we dish ours up with marinated chicken and fish too.

- 1 tbsp ghee
- 2 tbsp water
- 1 cauliflower
- 1 tsp turmeric
- 1 tsp garam masala
- 5 cardamon pods crushed
- 1 pinch saffron
- 2 tbsp desicated coconut
- 1 handful pistachio nuts shelled

Instructions
- Gently pulse the cauliflower in a blender or grate to form a rice texture.
- Heat the ghee in a large frying pan, add the water and cauliflower and cook with the lid on for about 8 minutes.
- Add the turmeric, garam masala, cardamons, saffron and coconut, stir through and cook for a few more minutes in the the cauliflower is ready to eat.
- Scatter the pistachio nuts on top and serve with your favourite curry!
