Ingredients

finely chopped fresh sage

finely chopped fresh thyme

finely chopped fresh rosemary

tbsp finely chopped fresh parsley

tbsp finely chopped fresh basil

small garlic clove
minced

extra virgin olive oil
zest of 1/2 lemon

tbsp freshly squeezed lemon juice

skinless chicken breasts, pounded to 1/4thick
Instructions
Combine the herbs, garlic, olive oil, lemon zest and juice
Add the chicken and rub the mixture all over
Leave to marinate for at least 1/2 hour and up to overnight
Grill in a pan until just cooked (just a few mins on each side if you’ve pounded it nice and thinly)
