This is SUCH a quick and easy recipe – great if you need a speedy supper – but lovely and tasty too. If you don’t have all the herbs in just add your own selection. This dish goes great with a nice big side of steamed veggies.

Ingredients
- 1 tsp finely chopped fresh sage
- 1 tsp finely chopped fresh thyme
- 1 tsp finely chopped fresh rosemary
- 1 tbsp finely chopped fresh parsley
- 1 tbsp finely chopped fresh basil
- 1 small garlic clove minced
- 1/4 cup extra virgin olive oil
- zest of 1/2 lemon
- 2 tbsp freshly squeezed lemon juice
- 1/2 tsp course sea salt
- 4 inch boneless skinless chicken breasts, pounded to 1/4thick

Instructions
- Combine the herbs, garlic, olive oil, lemon zest and juice
- Add the chicken and rub the mixture all over
- Leave to marinate for at least 1/2 hour and up to overnight
- Grill in a pan until just cooked (just a few mins on each side if you've pounded it nice and thinly)
