- 500 G Frozen peas Cooked and drained
- 2 Cloves garlic Peeled and sliced
- 2-3 Tbsp Fresh mint
- 1/2 lemon Juice only
- 2 Cups Tricolour quinoa Cooked
- 2 Cups Kale/spinach/cabbage/any other green Chopped/shredded
- 1 Cup Chopped fresh herbs Eg mint, parsley, coriander
- 1 Cup chopped tomatoes
- 1 Cup Chopped cucumber
- 1 broccoli Chopped into small pieces
- 1/2 Cup pomegranate seeds
- 1/2 lemon Juice only
- 1 Tbsp olive oil
- 3-4 Tbsp tahini
- 1 lemon Juice only

Instructions
- Blend the peas, garlic, mint and lemon but only until it is just bound together, but still chunky.
- Meanwhile mix together the salad ingredients along with the lemon juice and olive oil.
- Roll spoonfuls of the mixture in your hands, flatten onto a baking tray and bake at 175oC for around 20 minutes or until firm.
- In a separate bowl, mix the tahini, lemon juice and water to reach your desired consistency.
- Dish up your sale and patties with a dollop of the tahini dressing.
