I’m posting this straight after a steak recipe as they go so well together, but actually they are a great side to many dishes. Our kids absolutely love these ‘chips’, which is strange because apparently they don’t like parsnips (mummy scores!!).

- 3-4 parsnips
- 1-2 tbsp ghee or coconut oil
- sea salt and black pepper

Instructions
- Preheat the oven to 200oC
- Cut your parsnips into the smallest strips you can. I use the julienne attachment on my blender but you can also slice the parsnips into long strips down the length and then cut tiny chips.
- Spread the chips onto a baking sheet and dot with the ghee or coconut oil.
- Cook in the oven for about 20 minutes, mixing after a few minutes to distribute the ghee or oil and again after about 10 minutes.
