I’m posting this straight after a steak recipe as they go so well together, but actually they are a great side to many dishes. Our kids absolutely love these ‘chips’, which is strange because apparently they don’t like parsnips (mummy scores!!).

Instructions
Preheat the oven to 200oC
Cut your parsnips into the smallest strips you can. I use the julienne attachment on my blender but you can also slice the parsnips into long strips down the length and then cut tiny chips.
Spread the chips onto a baking sheet and dot with the ghee or coconut oil.
Cook in the oven for about 20 minutes, mixing after a few minutes to distribute the ghee or oil and again after about 10 minutes.
