I can’t really say much more about these little beauties other than they can be a great addition to any meal. I tend to make a batch once every few weeks and keep them in the fridge to add to salads and other meals.

Ingredients
- Cherry tomatoes or pretty much any other tomato of your choice
- garlic minced
- Oil of your choice
- Fresh herb of your choice thyme and rosemary work well

Instructions
- Pre heat oven to approx. 125oC
- Slice tomatoes in half and place on a baking sheet with the middle of the tomato facing up
- Mix the garlic with the oil and brush this over the tomatoes
- Scatter a handful of herbs if using
- Bake in the oven for approx. 2 hours
