Ingredients
1
Orange
4
tbsp coconut oil or melted butter
1
tbsp thyme
2
tsp
sea salt
1
tsp
freshly ground black pepper
4
chicken thighs
2
small fennel bulbs
quartered
Seeds from 1/2 a pomegranate
Instructions
Preheat the oven to 200oC
Zest the orange and cut into eighths
Put the zest, coconut oil or butter, thyme, salt and pepper into a bowl and massage it into the chicken
Mix in the fennel and orange pieces and place in a roasting tin, skin facing up
Roast for 45 mins, basting the chicken with the juices half way through
Sprinkle the pomegranate seeds over the top to serve
