Mmm, zest, citrusy, fruity, aniseedy, succulent, juicy…. a truly delicious and of course simple dish. Top marks again to Madeleine for this one!! I dished mine up with some cauliflower mash and baby corn.

Instructions
- Preheat the oven to 200oC
- Zest the orange and cut into eighths
- Put the zest, coconut oil or butter, thyme, salt and pepper into a bowl and massage it into the chicken
- Mix in the fennel and orange pieces and place in a roasting tin, skin facing up
- Roast for 45 mins, basting the chicken with the juices half way through
- Sprinkle the pomegranate seeds over the top to serve
