Ingredients
- 1 red onion cut into large chunks
- 2-3 sweet potatoes scrubbed and cut into large chunks
- 3 Garlic cloves peeled and sliced
- 2 handfuls Cherry tomatoes
- 2 tbsp smoked paprika
- 2 tsp cumin seeds
- 3 sprigs fresh thyme leaves only
- 1 tin chickpeas drained and rinsed
- 2 tbsp coconut oil melted
- 8 chicken drumsticks
- 10 handfuls kale

Instructions
- Preheat the oven to 180oC.
- In a large casserole dish, mix together all of the ingredients apart from the chicken and kale.
- Lay the drumsticks on top and bake in the oven for around 45 mins, adding in the kale about 10 minutes before the end.
