It’s a challenge finding a healthy breakfast that kids are happy to eat isn’t it? The trouble is, they are so bombarded with such powerful marketing, and supermarket shelves filled with delicious looking sugar-filled boxes, but let’s face it, that’s not a great way to start the day is it? So if we can find a slightly better alternative – I don’t know about you – but I’m going to snap it right up!! I get pestered a lot for co-co pops, so we thought we’d have a go at making our own and it worked! Admittedly, a high protein breakfast is, of course the best option, but as a middle ground, these ‘no-co pops’ are a fun little option that might just appease the constant begging and whining!

Instructions
Preheat the oven to 170oC and line two baking sheets with parchment paper.
In a pan, melt the coconut oil and nut butter, along with all of the other ingredients.
Mix the melted ingredients into the puffed rice and spread them onto the prepared baking trays.
Bake in the oven for about 10 minutes, checking half way through to ensure they aren't burning.
