- 1 Tbsp coconut oil Melted
- 2-3 chicken breasts Chopped
- 1 Tsp cumin
- Pinch salt and pepper
- 5 Tomatoes Chopped
- 1/2 red onion Chopped
- 1 Red or green chilli Chopped (deseeded if you want a milder taste)
- 1 Handful fresh coriander Chopped
- 1 lime Juice only
- 1/2 Fennel Chopped
- 70 G Mozzarella Torn

Instructions
- Preheat the oven to around 180oC.
- Coat the chicken in the coconut oil, cumin, salt and pepper and griddle until cooked through.
- Throw the cooked chicken, along with the rest of the ingredients, apart from the mozzarella into an oven proof dish.
- Scatter the mozzarella on top and bake in the oven for around 20-30 minutes.
