Instructions
Mix the mince, oregano and red onion then roll into balls (these can be refrigerated until you are ready to eat or whilst you make the sauce).
Heat the tomatoes or passata, red wine, oregano and chilli flakes in a pan and simmer for 10 minutes or so.
When you’re ready, pre heat the oven to about 180oC and brown the meatballs in a little oil or ghee.
Lay the spinach in the bottom of an ovenproof dish, add the meatballs on top, then pour the sauce on top of this.
Cover and bake in the oven for about 30 minutes then uncover, add the feta, pine nuts and parsley and cook for a further 10 minutes.
