We love a meatball in our house and this easy and delicious meal is a nice addition to our meatball meal repertoire! Quick and easy to prepare, you can make it ahead of time and don’t forget to save some for lunch the following day – if you can stop it from being gobbled up!!

Ingredients
- 500 G lamb mince
- 1/2 red onion Finely chopped (omit for low FM)
- 2 Tsp dried oregano
- 2 Tins Chopped tomatoes or passata
- 1/2 Cup red wine
- 1 Tbsp Fresh or dried oregano
- 1/2-1 Tsp dried chilli flakes
- 4 Handfuls fresh spinach
- 50 G feta Crumbled
- 2 Tbsp pine nuts
- 1 Tbsp fresh parsley

Instructions
- Mix the mince, oregano and red onion then roll into balls (these can be refrigerated until you are ready to eat or whilst you make the sauce).
- Heat the tomatoes or passata, red wine, oregano and chilli flakes in a pan and simmer for 10 minutes or so.
- When you’re ready, pre heat the oven to about 180oC and brown the meatballs in a little oil or ghee.
- Lay the spinach in the bottom of an ovenproof dish, add the meatballs on top, then pour the sauce on top of this.
- Cover and bake in the oven for about 30 minutes then uncover, add the feta, pine nuts and parsley and cook for a further 10 minutes.
