I can’t get my daughter to have anything but these in her lunch box at the moment. Not that I mind – alongside some cucumber and carrot sticks, fruit and a home-baked sugar free dessert its not a bad lunch for a 3 year old!

Ingredients
- small handful of spinach finely chopped
- 1 egg
- 1 tsp chia seeds
- 1 tsp grated goats cheese
- gluten free wrap

Instructions
- Fry the spinach in a little butter until it wilts
- Beat the egg, mix in the chia seeds and poor into the pan
- Sprinkle the cheese on top and cook until it become firm, then flip to briefly cook the other side
- Tip the egg onto the wrap, roll and either eat straight away or wrap up for later
