Ingredients

tbsp
garlic infused olive oil
3
sticks celery
chopped
3
large
courgettes
cubed

Tomatoes
chopped
1-2
ltr
homemade stock or water
(depending on desired thickness)
Pinch
salt and pepper
1/2
tsp
ground turmeric

handfuls
fresh basil
chopped
Instructions
Heat the olive oil in a large pan and saute the celery and courgettes for about 5 minutes.
Add the chopped tomatoes for a further few minutes.
Add the water or stock, salt and pepper and turmeric and simmer for about 15 minutes, until the vegetables are soft.
Add the basil and blend with a hand blender in the pan or transfer to a mixer.
