So soup season is fast approaching. Not that it makes a difference because I could eat soup any time of the year. Particularly when it’s as easy to make and tastes as delicious as this. Not only is this one healthy and nutritious but the low FODMAP ingredients will be kind to your tummy too.

Ingredients
- 2 tbsp garlic infused olive oil
- 3 sticks celery chopped
- 3 large courgettes cubed
- 7 Tomatoes chopped
- 1-2 ltr homemade stock or water (depending on desired thickness)
- Pinch salt and pepper
- 1/2 tsp ground turmeric
- 2 handfuls fresh basil chopped

Instructions
- Heat the olive oil in a large pan and saute the celery and courgettes for about 5 minutes.
- Add the chopped tomatoes for a further few minutes.
- Add the water or stock, salt and pepper and turmeric and simmer for about 15 minutes, until the vegetables are soft.
- Add the basil and blend with a hand blender in the pan or transfer to a mixer.
