  1. Fry the pancetta or bacon in the garlic olive oil, in a large pan for a few minutes.
  2. Add the carrots and celery and continue to cook for another 8-10 minutes until starting to soften.
  3. Add the courgettes, tinned tomatoes, stock, salt and pepper, bring to the boil and cook for about 15 minutes.
  4. When cooked, throw in the fresh basil, pour into bowls and top with a little shaved Parmesan or Pecorino cheese if tolerated.
