I recently went on a low FODMAP diet to try to get to the route of some reactions to certain foods. Now you know I don’t like to ‘diet’ so my initial feeling was that it was going to be really restrictive and boring, particularly as you need to eliminate things such as onions, garlic and celery and lots of my favourite vegetables such as broccoli and cauliflower. However, I soon got my head around flavouring my foods in other ways and this is one of the recipes I created.
By the way, FODMAP stands for Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols (glad you asked??), which are essentially short chain carbohydrates (sugars) found in certain foods, that are incompletely absorbed and can be easily fermented in the gut causing digestive complaints.

Instructions
If using wooden skewers, soak them in some water for around 30 minutes first.
Mix together all of the ingredients in a bowl, shape the meat into fingers shapes and insert the skewers into the middle.
Heat a skillet pan and fry the koftas for around 8 minutes, turning to cook all the way around.
