- 1 Tbsp coconut oil
- 400g Chicken breasts or pieces
- 2 carrots Scrubbed and sliced
- 1 Celery Sliced
- 1 red pepper
- 2 Handfuls cherry tomatoes Halved
- 1 Tin crushed tomatoes
- 1/2 Tin Water or white wine
- 1 Tbsp dried oregano
- 1 Tbsp sun dried tomato paste
- 2 Tbsp capers
- 4 Tbsp Pitted black olives
- 1 Handful fresh coriander Chopped
- 1 Handful fresh basil Chopped

Instructions
- Heat the coconut oil in a large heavy based pan and brown the chicken.
- Remove the chicken and add the carrots and celery and cook for about 4 minutes.
- Add the peppers and tomatoes and after about 1-2 minutes of cooking add the tinned tomatoes, water (or wine), tomato paste and oregano and stir.
- Return the chicken to the pan and simmer with a lid on for about 15 mins.
- For the remaining 15 minutes of cooking add the capers, olives and fresh herbs.
