I’m feeling a little bit of a lemon theme at the moment. Maybe it’s something to do with summer being around the corner. These little beauties are fresh and light and the perfect little bite to offer if you have friends round.

Ingredients
- 200 g ground almonds
- 1 tsp gluten free baking powder
- pinch of fine sea salt
- 4 tbsp coconut oil at room temperature
- 2 tbsp organic maple syrup
- 2 tbsp Lemon juice
- 1 tbsp finely grated organic or unwaxed lemon zest

Instructions
- Preheat the oven to 180oC and line a couple of baking sheets
- Stir together the ground almonds, baking powder and salt
- Then mix in the coconut oil, maple syrup, lemon juice and zest
- Roll the mixture into small balls, place them onto the prepared trays and gently press to flatten
- Bake for 8-10 mins until golden brown
- Leave on the tray for 5 mins before transferring to a wire rack to cool
