Ingredients

raw cashews

gluten free oats
1/2
cup
raw unsweetened desiccated coconut

Medjool dates
I briefly soaked my datesthe water first to soften them for blending
1/4
cup
hot water
2
tbsp chia seeds
zest of a lemon
pinch
of sea salt
Instructions
Blend the cashews, oats and coconut in a blender
Add the dates, water, chia seeds and lemon zest and blend until incorporated
Roll into small balls (I prefer to grease my hands with a bit of coconut oil first)
Roll the balls into some extra coconut or chia seeds and re-roll to secure
(Store in the fridge)
