We love balls!!! Spirulina protein balls, high energy almond butter balls, chocolate power balls… All of which I’ll get to in due course, but in the meantime these are a nice light little option. I quickly whipped them up yesterday morning as a post lunch snack for the kids as they were going out on a picnic with granny.

Ingredients
- 1 cup raw cashews
- 1/2 cup gluten free oats
- 1/2 cup raw unsweetened desiccated coconut
- 8 in Medjool dates I briefly soaked my datesthe water first to soften them for blending
- 1/4 cup hot water
- 2 tbsp chia seeds
- zest of a lemon
- pinch of sea salt

Instructions
- Blend the cashews, oats and coconut in a blender
- Add the dates, water, chia seeds and lemon zest and blend until incorporated
- Roll into small balls (I prefer to grease my hands with a bit of coconut oil first)
- Roll the balls into some extra coconut or chia seeds and re-roll to secure
- (Store in the fridge)
