lamb cutlets
300
g
chickpeas
drained and rinsed
1/2
cup
Dijon mustard
12
chives
finely chopped
Instructions
Grill the cutlets on a high heat for about 4 minutes on each side or until done to your liking.
Cover with foil and set aside to rest for 5 minutes.
Blend the chickpeas, adding some water to form a smooth paste and season well.
Paint the cutlets with the mustard and sprinkle with chives.
Serve with a dollop of chickpea puree.
