  1. Grill the cutlets on a high heat for about 4 minutes on each side or until done to your liking.
  2. Cover with foil and set aside to rest for 5 minutes.
  3. Blend the chickpeas, adding some water to form a smooth paste and season well.
  4. Paint the cutlets with the mustard and sprinkle with chives.
  5. Serve with a dollop of chickpea puree.
