Does anyone else find lamb chops a bit disappointing? Yeah me too – we have to have plenty to go around as you know we like a bone to suck on and there’s not a lot of meat on them. However, in the interest of variety I do occasionally dish them up. If you’re partial to a lamb chop this is a really quick, easy and tasty recipe.

- 12 lamb cutlets
- 300 g chickpeas drained and rinsed
- 1/2 cup Dijon mustard
- 12 chives finely chopped

Instructions
- Grill the cutlets on a high heat for about 4 minutes on each side or until done to your liking.
- Cover with foil and set aside to rest for 5 minutes.
- Blend the chickpeas, adding some water to form a smooth paste and season well.
- Paint the cutlets with the mustard and sprinkle with chives.
- Serve with a dollop of chickpea puree.
